Chocolate-Coated Granola Snack Bars


 

These bars are a favorite on our Signature Yoga Vacations because they make the perfect pre or post yoga snack! They also are a great fast recipe to mix up on the weekend so you have a healthy snack or dessert on hand throughout the week that will fuel you naturally. The mix of cacao butter and orange really give these bars a special kick that makes them taste really decadent, compared to a regular trail bar. These keep well in the fridge, transport well and are loved by kids and adults alike. Make up a tray and enjoy!

Ingredients:

Dry:

2 Cups Crispy Rice Cereal
1 Cups Rolled Oats
1/2 Cup Desiccated Coconut
1/2 Cup Flaked almonds
1/2 Cup Pumpkin Seeds
1/4 Cup Sesame seeds
1/4 Cup Raisins
1/4 Goji Berries
2 tablespoons Cacao Nibs
1 teaspoon Orange Zest
1 tablespoon Maca Powder
3/4 teaspoon Salt
2 Tablespoons ground Flax Seeds

Wet:
1/2 cup Coconut Nectar
1/2 cup Peanut Butter
1 teaspoon Vanilla Extract
3 Tablespoons Coconut Oil
2 tablespoons Cacao Butter

Optional- your favorite dark chocolate to drizzle

Method:

Place all of the dry ingredients in a large bowl and mix well.

In a saucepan over low heat, melt the coconut oil, cacao butter, peanut butter, vanilla, and coconut nectar.

Pour the wet ingredients over the dry and mix very well to combine. Transfer the mixture to a lined slice tin and press down very well. It can be helpful to place another sheet of baking paper over top to smooth out and press down well.

If you are adding the chocolate topping, chop your favourite dark chocolate bar into pieces and melt over low heat in a saucepan. Drizzle the chocolate over the top of the slice.

Refrigerate for 2-3 hours until firm and then cut into bars. Enjoy!
